            3月18日上午,本网记者来到位于潜山路和望江西路交汇处的华府骏苑菜市场,这个菜市场规模较大,菜品种类也比较齐全,走进菜市场,各色蔬菜琳琅满目,大概有十几家摊位都有香椿头售卖。摊主董女士告诉记者,香椿头是时令蔬菜,过年时就有了,但价格昂贵,最近随着天气暖和,价格也在不断下跌。“在过年的时候香椿曾卖过70元一斤,现在进货整箱香椿头三斤半,今天比昨天拿货价格就便宜了近10块。”摊主戴先生介绍说,现在香椿基本都是海南、重庆等地的外地货,生产成本不低,再加上运输,到了合肥价格就很高,他在正月初八开始卖香椿的时候,一斤100元到120元,一小把的香椿就要28元,远远超过肉价。由于价格不菲,香椿现在走的量并不大,很多人也就是买一点尝尝鲜,一般摊主一天也就卖个三四斤香椿。

            不论是凉拌还是炒蛋,香椿头总是让人停不下筷子,不过食品专家也提醒,香椿头虽好吃,但挑选和烹饪也有讲究,因为每100克香椿头会产生50到300毫克不等的亚硝酸盐,一次性摄入过多,可能出现头晕、休克等应急性症状。香椿炒前最好用开水焯烫一遍,挑选时,要新鲜的红色初芽,食用时可和富含维生素C的食物一起吃,有效降低有毒物质的形成。
